On a regular basis, I try to come up with meals based on the ingredients we have at home. It's a fun challenge each time and I am usually able to come up with something that's pretty delicious. Well, last week I made these amazing burritos. I didn't know for sure how they'd turn out. I sort of modeled the recipe after something I ate years ago at a Mexican restaurant in KC. All I remember was a chicken burrito with jalepeno cream cheese. Anyway, these are Chicken & Black Bean Burritos with Lime-Infused Cream Cheese. They will blow your mind. We ate them hot for dinner and cold the next day for lunch. Both versions were delish.
What you need:
1 large chicken breast
1 can of black beans (drained)
Flour tortillas (medium work well)
8 oz. brick of cream cheese
1 Lime
Olive oil
Salt
Pepper
Cumin
Shredded cheese, sour cream, and salsa (optional)
Directions:
Preheat your oven to 400 degrees.
Coat your raw chicken breast with olive oil. Season generously with salt, pepper, and cumin. On medium-high heat, grill your chicken breast until cooked through. (We used a grill pan for those tasty grill marks, but you could use a skillet just as well.) Squeeze juice of half a lime on chicken while cooking.
In the meantime, soften your cream cheese in a bowl. Squeeze the juice from the other half of the lime into your cream cheese. Zest the lime leftovers into cream cheese as well. Stir to combine.
When chicken is cooked through, cut in into bite-sized pieces and let cool a bit.
To assemble burritos, lay a tortilla flat on a plate. Spread a generous amount of cream cheese onto the tortilla, followed by a heaping spoon of black beans and a good amount of chopped chicken. Fold in the ends and roll up. Place in a greased baking dish.
Continue assembling tortillas until all of your ingredients are gone. (Ours made about 5 burritos.)
Top with shredded cheese and bake for 15-20 minutes until cheese is melted and burritos are hot.
Serve with sour cream, salsa, cilantro, and any other toppings you wish!
