Oh my goodness. I made these last week and they were gone in a matter of days. These seriously might be the best cookies EVER. Make some now and thank Fox in the Pine later.
1 C brown sugar
1 C white sugar
1 C butter
2 eggs
1 tsp vanilla
2 C white flour
1.5 C oatmeal
1 tsp baking soda
1 tsp baking powder
1 tsp salt
6 oz. milk chocolate chips
6 oz. white chocolate chips
1.5 C chopped pecans
-Using a stand mixer, cream together butter and sugars. Add eggs and vanilla and mix until combined.
-In a separate bowl, whisk together flour, oatmeal, baking powder, baking soda, and salt.
-Add flour mixture to the butter mixture in batches, scraping the sides with a spatula as you go.
-When everything is combined, fold in chocolate and pecans.
-Using an ice cream scoop, place 1-inch balls onto parchment paper lined cookie sheets.
-Bake at 425 degrees for 10-12 minutes until golden brown.
-Let cool on cookie sheet until you can't stand it anymore and have to eat one.
Makes about 3 or 4 dozen.
