Last weekend, Phil woke up and made everyone waffles from scratch! But they weren't just regular waffles, they were APPLE CINNAMON waffles made from wheat flour! Hip-hip-hooray for a man in the kitchen! The recipe made a lot - probably enough for 6 people or so. Since only 3 of us were eating them, we had leftovers for breakfast all week long. (And, I think they'd freeze pretty well too!)
Ingredients:
1 C all-purpose flour
1 C whole wheat flour
1 TBLS sugar
4 tsp baking powder
Pinch of salt
1/4 C melted butter
1/4 C oil
2 large eggs
1 3/4 C milk
1 C chopped apple
Lemon juice
2 tsp cinnamon

- Preheat your waffle iron and spray it with cooking spray.
- In a small bowl, whisk together flours, sugar, baking powder, and salt. Set aside.
- In a large bowl, whisk eggs together until foamy. Add melted butter, oil, and milk until combined. Slowly add flour mixture to wet ingredients. Mix well.
- In a separate bowl, sprinkle chopped apples with lemon juice. Toss in cinnamon, and stir to coat.
- Pour batter into waffle iron and sprinkle with the apple-cinnamon mixture. Heat until cooked through.
- Repeat until all your batter is gone!
These were delicious! Addie loved them, too. You could even add some flax seed or oats to make them a tad healthier. Enjoy!
