1 C oats
1/2 C natural peanut butter
1/3 C local honey
1/2 C flax seed, whole or milled
1/2 C chocolate chips
2/3 C coconut flakes
1 tsp vanilla
Mix all ingredients together, then refrigerate for an hour or so. When cold and firm, roll into balls. Store them in the fridge until they’re gone!
You can make these in a variety of ways – any nut butter will work in place of the peanut butter and you can use dried fruit instead of chocolate chips, if you like. Get creative and enjoy! xoxo, L
